Ingredients:1.5 cups of couscous2 3/4 cups water1/4 tsp salt1 can of black beans, drained and rinsedHalf of a small red onion, chopped2 tbsp. cilantro1 cup salsaDirections:1. In a saucepan, bring water and salt to a boil2. Add couscous and stir, then turn off the heat and cover3. Allow couscous to sit for 5 minutes, this allows it to absorb the water4. While couscous sits, prepare the rest of the salad ingredients5. Combine black beans, red onion, cilantro, and salsa in a bowl6. Pour black bean mixture over the top of prepared couscous- serve warm, or place in the refrigerator for a cold salad.
