A fantastic culinary treat sent in by Julie Ann Knott of Dream Affairs Catering.INGREDIENTS:3 avocados – peeled, pitted, and mashed1 lime, juiced1 teaspoon salt1/2 cup diced onion3 tablespoons chopped fresh cilantro2 roma (plum) tomatoes, diced1 teaspoon minced garlic1 pinch ground cayenne pepper (optional)DIRECTIONS:1. In a medium bowl, mash together the avocados, lime juice, and salt. 2. Mix in onion, cilantro, tomatoes, and garlic. 3. Stir in cayenne pepper. 4. Refrigerate 1 hour for best flavor, or serve immediately.Tips of Peeling & Pitting an avocado…When you purchase your avocados get them either ripe, with some give to the touch, or get them still firm, a few days ahead of when they are needed, and put them in a brown paper bag to ripen.How to Cut and Peel an Avocado1. Grip the avocado gently on one side with one hand. With a large, sharp knife in the other hand, cut the avocado lengthwise around the seed. Open the two halves to expose the pit.2. For safety, fold up a kitchen towel and use that to hold the avocado half with the pit. Gently tap the pit with a knife with enough to wedge the knife into the pit, with the knife twist the pit out of the avocado and discard.3. Scoop out the avocado flesh with a spoon. Bon Appetite!
