Shrimp Hushpuppies

Ingredients: 7 ounces cooked shrimp Ground black pepper to taste 1 cup yellow cornmeal ¾ cups self-sising flour 1 teaspoon salt, plus more to season shrimp ½ teaspoons cayenne pepper ½ teaspoons paprika 1 cup milk 1 whole egg 1 minced small vidalia onion 3 minced celery stalks ¼ cups minced chives Oil for frying Directions: Cut the shrimp into small pieces put to the side. Season with salt and pepper. Add the cormmeal, flour, 1 teaspoon salt, cayenne, paprika, and whisk together. Add the milk and the egg and stir. Add the onions, celery, chives, and shrimp and stir in with a wooden spoon. The batter should be thick. Preheat the oil to 350ºF. Once the oil is ready, use a mini cookie scooper and scoop some of the batter in a spoon and into the hot oil. Allow to cook for 3-5 minutes or until golden brown. Place on paper lined plate to allow them to drain. Season with salt if you choose.
