Bone in Boston Butt4 tsp. salt4 tsp. garlic powder4 tsp. onion powder4 tbsp. paprika2 tsp. cumin3 tsp. black pepper1 tsp. cayenne (for a sweeter rub add 5 tbsp. dark brown sugar)mustardapple juiceolive oilDirections:Mix all dry ingredients together. Apply a think coat of mustard to the roast. Rub the butt with the dry rub. You can do this the night before and wrap it and let it sit in refrigerator and let the flavors penetrate the meat. Inject the roast with apple juice to ensure the roast stays moist. Heat your BBQ to 225 degrees and cook the roast on indirect heat. Add your soaked wood chips to add smoke flavor. Cook the roast 60-90 minutes per pound. Every 2.5 hours turn the roast. Mop the butt with a combination of apple juice and olive oil.When the internal temperature reaches 190 degrees, it is done.
