SPRINGTIME VEGETABLE SLAW

1 lb. shredded cabbage 1 c. grated carrots 1/2 c. broccoli flowerets, chopped 1/2 c. diced tomatoes 1/2 c. sliced celery 1/2 c. peeled, seeded, diced cucumber 1 c. chopped parsley 1/3 c. olive oil 2 tbsp. vinegar 1 tbsp. Dijon mustard 1 tsp. garlic salt Combine cabbage, carrots, broccoli, tomatoes, celery and cucumber in salad bowl. Whisk together remaining ingredients for dressing. Toss salad with dressing. Makes 10 servings.
